 Classic Fried Rice Recipe

Yields: 4 servings

Ingredients:

 * 2 cups cooked rice (preferably leftover, cooled)

 * 2 large eggs, beaten

 * 2 tablespoons vegetable oil

 * 1 onion, chopped

 * 2 cloves garlic, minced

 * 1 carrot, chopped

 * 1/2 cup frozen peas (optional)

 * 1/4 cup soy sauce

 * 2 tablespoons oyster sauce (optional)

 * 1 teaspoon sesame oil

 * Salt and pepper to taste

 * Chopped green onions for garnish

Instructions:

 * Cook the rice: If you haven't already, cook the rice according to package directions. Cool it completely before using.

 * Prepare the vegetables: Chop the onion, garlic, and carrot. If using peas, thaw them.

 * Scramble the eggs: Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble them until cooked through. Remove the eggs from the pan and set aside.

 * Sauté the vegetables: Add the remaining tablespoon of oil to the pan. Add the onion and garlic and cook until softened, about 5 minutes. Add the carrot and peas (if using) and cook for another 5 minutes, or until the vegetables are tender-crisp.

 * Combine ingredients: Add the cooked rice, soy sauce, oyster sauce (if using), sesame oil, salt, and pepper to the pan. Stir-fry everything together until the rice is heated through and well coated with the sauce.

 * Add the eggs: Return the scrambled eggs to the pan and stir-fry everything together for another minute or two.

 * Serve: Garnish with chopped green onions and serve immediately.

Tips:

 * For extra flavor, add a pinch of ground ginger or a dash of hot sauce.

 * You can use any vegetables you like in your fried rice. Some other popular choices include broccoli, bell peppers, and mushrooms.

 * If you don't have leftover rice, you can use freshly cooked rice, but it may be a bit stickier.

 * For a more authentic flavor, use Chinese rice wine vinegar instead of soy sauce.

 * Serve your fried rice with your favorite Asian-inspired dishes, such as stir-fried vegetables, spring rolls, or wonton soup.
