Classic Focaccia Recipe
Yields: 1 large loaf

Ingredients:
* 3 cups all-purpose flour
* 1 teaspoon salt
* 1 teaspoon instant yeast
* 1 1/4 cups warm water (105-115°F)
* 3 tablespoons olive oil, plus more for drizzling
* 1 teaspoon sugar (optional)
* Coarse sea salt or flaky salt
* Fresh rosemary sprigs (optional)
* Other toppings (optional): chopped garlic, sliced onions, cherry tomatoes, etc.
Instructions:
* Combine ingredients: In a large bowl, whisk together flour, salt, yeast, and sugar (if using).
* Add water and oil: Make a well in the center of the dry ingredients. Pour in warm water and olive oil. Stir with a wooden spoon until a shaggy dough forms.
* Knead the dough: Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
* First rise: Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-2 hours, or until doubled in size.
* Shape the focaccia: Line a baking sheet with parchment paper. Gently press the dough into the prepared pan, using your fingers to create dimples.
* Second rise: Drizzle the dough with 1 tablespoon of olive oil. Cover and let rise for another 30 minutes.
* Add toppings: Drizzle the dough with another tablespoon of olive oil. Sprinkle with coarse salt, rosemary sprigs (if using), and any other desired toppings.
* Bake: Preheat oven to 425°F (220°C). Bake the focaccia for 20-25 minutes, or until golden brown and cooked through.
* Cool and serve: Let the focaccia cool slightly on a wire rack before slicing and serving.
Tips:
* For a crispier crust, bake the focaccia on a pizza stone.
* Get creative with toppings! Try adding chopped herbs, grated cheese, or roasted vegetables.
* To make mini focaccia, divide the dough into smaller portions and bake on individual sheets.
