Crispy Falafel Recipe

Yields: About 12 falafel balls

Prep time: 20 minutes

Cook time: 15 minutes

Ingredients:

 * 1 cup dried chickpeas, soaked overnight and drained

 * 1/2 onion, chopped

 * 3 cloves garlic, minced

 * 1/4 cup chopped fresh parsley

 * 1/4 cup chopped fresh cilantro

 * 1 teaspoon ground cumin

 * 1/2 teaspoon ground coriander

 * 1/4 teaspoon baking powder

 * 1/4 teaspoon salt

 * 1/8 teaspoon black pepper

 * 2 tablespoons all-purpose flour

 * Oil for frying

Instructions:

 * Combine ingredients: In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is finely chopped but not completely smooth.

 * Add flour: Gradually add the flour to the chickpea mixture, pulsing until it just comes together.

 * Shape falafel: Use your hands to shape the mixture into small balls or patties.

 * Fry falafel: Heat about 1 inch of oil in a deep skillet or pot over medium heat. Carefully add the falafel balls to the hot oil and fry for 3-4 minutes per side, or until golden brown and crispy.

 * Drain and serve: Remove the falafel from the oil and drain on paper towels. Serve immediately with your favorite toppings, such as hummus, tahini sauce, pita bread, and salad.

Tips:

 * For a crispier falafel, add a tablespoon of toasted sesame seeds to the mixture.

 * If the mixture is too wet, add a little more flour.

 * If the mixture is too dry, add a tablespoon of water.

 * Serve falafel with your favorite dipping sauces, such as tahini sauce, hummus, or yogurt sauce.
