Crispy Fried Chicken Recipe

Ingredients:
* 1.5 lbs bone-in, skin-on chicken pieces (thighs, drumsticks, or a mix)
* 1 cup buttermilk
* 1 tablespoon hot sauce (optional)
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1 cup all-purpose flour
* 1/2 cup cornstarch
* 1 teaspoon paprika
* 1/2 teaspoon garlic powder
* 1/4 teaspoon onion powder
* 1/4 teaspoon cayenne pepper (optional)
* Vegetable oil for frying
Instructions:
* Marinate the chicken: In a large bowl or zip-top bag, combine the buttermilk, hot sauce (if using), salt, and pepper. Add the chicken pieces and marinate in the refrigerator for at least 1 hour, or up to 24 hours.
* Prepare the breading: In a shallow dish, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, and cayenne pepper (if using).
* Dredge the chicken: Remove the chicken from the marinade and let excess drip off. Dredge each piece in the flour mixture, coating it evenly on all sides.
* Fry the chicken: Heat about 1 inch of vegetable oil in a large skillet or pot over medium heat. Once the oil is hot, carefully add the chicken pieces, a few at a time, being careful not to overcrowd the pan. Fry for about 10-12 minutes per side, or until golden brown and cooked through.
* Drain and serve: Remove the chicken from the oil and drain on paper towels. Serve immediately with your favorite dipping sauces, such as honey mustard, ranch, or BBQ sauce.
Tips:
* For extra crispy skin, double-dip the chicken in the flour mixture.
* If you don't have buttermilk, you can use plain yogurt or milk.
* To test if the oil is hot enough, drop a small piece of bread into the oil. It should sizzle and float to the surface immediately.
* Be careful when handling hot oil.
