Roast Turkey Breast recipe

 Yields: 4-6 servings

Prep time: 15 minutes

Cook time: 1.5-2 hours

Ingredients:

 * 1 (3-4 pound) bone-in turkey breast

 * 1 tablespoon olive oil

 * 1 teaspoon dried thyme

 * 1/2 teaspoon salt

 * 1/4 teaspoon black pepper

 * 1/4 cup butter, melted

 * 1/4 cup chicken broth

Instructions:

 * Preheat oven: Preheat oven to 350°F (175°C).

 * Prepare turkey: Pat the turkey breast dry with paper towels. In a small bowl, combine olive oil, thyme, salt, and pepper. Rub the mixture all over the turkey breast, getting under the skin if possible.

 * Roast: Place the turkey breast in a roasting pan. Pour the melted butter over the top. Roast for 1.5-2 hours, or until an instant-read thermometer inserted into the thickest part of the breast reads 165°F (74°C).

 * Baste: During roasting, baste the turkey breast with the pan juices every 30 minutes.

 * Rest: Once cooked, remove the turkey breast from the oven and let it rest for at least 15 minutes before slicing. This allows the juices to redistribute.

Tips & Variations:

 * For extra flavor: Add chopped garlic, onion, or herbs like rosemary or sage to the roasting pan.

 * Spice it up: Add a pinch of cayenne pepper or red pepper flakes to the seasoning rub.

 * Make gravy: Use the pan drippings to make a delicious gravy. Deglaze the pan with chicken broth, add flour, and simmer until thickened.
