Ingredients:


For the Chocolate Wafer Cookies:


1 1/2 cups all-purpose flour


1/2 cup unsweetened cocoa powder


1 cup granulated sugar


1 teaspoon baking soda

1 teaspoon vanilla extract


2 tablespoons milk

1/4 cup unsalted butter (softened)


1/4 cup vegetable shortening (or use more butter for a butter-only filling)

Instructions:


1. Make the Wafer Cookies:


Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.


In a medium bowl, whisk together the flour, cocoa powder, granulated sugar, baking soda, and salt.


Add the softened butter, egg, vanilla extract, and milk to the dry ingredients. Mix until a dough forms. The dough will be thick and slightly crumbly.


Roll the dough out on a lightly floured surface to about 1/8 inch thick. Use a round cookie cutter (about 2 inches in diameter) to cut out cookies. Place the cookies on the prepared baking sheets, spacing them about 1 inch apart.

2. Make the Cream Filling:


In a medium bowl, cream together the softened butter and vegetable shortening until smooth and fluffy.
