 Roast Beef with Yorkshire Pudding

This classic Christmas dinner features a succulent roast beef, crispy Yorkshire puddings, and all the traditional trimmings.

Ingredients:

 * For the Roast Beef:

   * 2-3 lb boneless rib roast

   * 2 tablespoons olive oil

   * 2 sprigs fresh rosemary

   * 2 sprigs fresh thyme

   * 2 cloves garlic, smashed

   * Salt and pepper to taste

 * For the Yorkshire Pudding:

   * 1 cup all-purpose flour

   * 1 large egg

   * 1 cup milk

   * 1 tablespoon melted butter

   * Salt and pepper to taste

 * For the Gravy:

   * Pan drippings from the roast beef

   * 1 cup beef broth

   * 1 tablespoon all-purpose flour

   * Salt and pepper to taste

 * For the Sides:

   * Roasted potatoes

   * Roasted carrots

   * Brussels sprouts with bacon

   * Cranberry sauce

Instructions:

 * Prepare the Beef: Preheat oven to 400°F (200°C). Rub the beef roast with olive oil, rosemary, thyme, garlic, salt, and pepper.

 * Roast the Beef: Place the beef in a roasting pan and roast for 20-30 minutes, or until browned. Reduce heat to 325°F (165°C) and roast for an additional 15-20 minutes per pound, or until the internal temperature reaches 130°F (54°C) for medium-rare. Let the beef rest for 15 minutes before slicing.

 * Make the Yorkshire Puddings: While the beef rests, heat 1 tablespoon of vegetable oil in each of 6 muffin tins over medium-high heat. Whisk together flour, egg, milk, melted butter, salt, and pepper until smooth. Pour batter into hot muffin tins, filling each about 2/3 full. Bake for 10-15 minutes, or until golden brown and puffed up.

 * Make the Gravy: Skim excess fat from the pan drippings. In a saucepan, whisk together flour and beef broth. Bring to a simmer over medium heat, stirring constantly, until thickened. Season with salt and pepper to taste.

 * Serve: Slice the roast beef and serve with Yorkshire puddings, roasted potatoes, carrots, Brussels sprouts, cranberry sauce, and gravy.

Tips:

 * For extra flavor, you can marinate the beef overnight in a mixture of herbs and spices.

 * To make the gravy richer, you can add a spoonful of beef stock or red wine.

 * You can customize the side dishes to your liking.
