Ingredients:

 * 1 pound small red potatoes, scrubbed

 * 4 slices bacon, chopped

 * 1 small onion, chopped

 * 1/4 cup white vinegar

 * 2 tablespoons water

 * 1 1/2 tablespoons sugar

 * 1 teaspoon salt

 * 1/4 teaspoon black pepper

 * 1 tablespoon chopped fresh parsley

Instructions:

 * Place potatoes in a large pot and cover with salted water. Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes. Drain and let cool slightly.

 * While potatoes are cooking, cook bacon in a large skillet over medium heat until crisp. Remove bacon to a paper towel-lined plate and crumble.

 * Add onion to the bacon drippings in the skillet and cook until softened, about 5 minutes.

 * In a small bowl, whisk together vinegar, water, sugar, salt, and pepper.

 * Pour vinegar mixture over potatoes and toss to coat.

 * Add bacon and parsley to potatoes and toss again.

 * Serve warm or chilled.

Tips:

 * For a spicier potato salad, add a pinch of red pepper flakes to the vinegar mixture.

 * You can also add other vegetables to the potato salad, such as diced celery or bell peppers.

 * If you want a creamier potato salad, you can add a tablespoon of mayonnaise or sour cream.

 * German potato salad is best served within a day or two of making it.
