Ingredients:

For the crust:

 * 1 1/2 cups graham cracker crumbs

 * 2 tablespoons granulated sugar

For the filling:

 * 32 ounces cream cheese, softened

 * 1 1/2 cups granulated sugar

 * 1 teaspoon vanilla extract

 * 1/4 teaspoon salt

 * 4 large eggs

 * 1 cup sour cream

Instructions:

 * Make the crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom and up the sides of a 9-inch springform pan.

 * Make the filling: In a large bowl, beat cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add sugar, beating until well combined. Beat in vanilla extract and salt.

 * Add eggs: Beat in eggs one at a time, mixing on low speed just until combined. Be careful not to overmix.

 * Add sour cream: Stir in sour cream until just combined.

 * Bake: Pour filling into the prepared crust. Bake for 1 hour and 15 minutes, or until the center is set but still slightly jiggly.

 * Cool: Turn off the oven and leave the cheesecake inside for 1 hour to cool slightly. Then, run a thin knife around the edges of the cheesecake to loosen it from the pan. Refrigerate for at least 4 hours, or preferably overnight, before serving.
