Ingredients:

 * 1 (9-inch) unbaked pie crust

 * 1/2 cup chopped leeks (white and light green parts only)

 * 2 egg yolks

 * 1 cup heavy cream

 * 3/4 cup milk

 * Pinch of cayenne pepper (optional)

 * 6 ounces Gruyère cheese, shredded

Instructions:

 * Preheat oven: Preheat oven to 375°F (190°C).

 * Sauté vegetables: In a skillet, melt butter over medium heat. Add onion and leeks and cook until softened, about 5 minutes. Season with salt and pepper.

 * Prepare crust: Roll out the pie crust and press it into a 9-inch pie plate. Trim the edges and crimp as desired. Prick the bottom of the crust with a fork.
