Greek salad recipe

 Yields: 4 servings

Prep time: 15 minutes

Ingredients:

 * 1 English cucumber, peeled, seeded, and chopped

 * 1 pint cherry or grape tomatoes, halved

 * 1/2 red onion, thinly sliced

 * 1 cup crumbled feta cheese

 * 1/2 cup pitted Kalamata olives

 * 1/4 cup chopped fresh oregano

 * 1/4 cup chopped fresh mint

For the dressing:

 * 1/4 cup extra-virgin olive oil

 * 2 tablespoons red wine vinegar

 * 1 clove garlic, minced

 * 1 teaspoon dried oregano

 * Salt and freshly ground black pepper to taste

Instructions:

 * Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.

 * Combine ingredients: In a large bowl, combine the cucumber, tomatoes, red onion, feta cheese, olives, fresh oregano, and mint.

 * Toss with dressing: Pour the dressing over the salad and toss gently to coat.

 * Serve: Serve immediately or chill for later.

Tips:

 * For a heartier salad, add grilled chicken or shrimp.

 * Feel free to adjust the amount of herbs and spices to your liking.

 * If you don't have fresh herbs, you can use dried oregano and mint.

 * To make the salad ahead of time, prepare the dressing and vegetables separately. Combine them just before serving.
