Gobi Paratha (Cauliflower Paratha)

Gobi Paratha is a delicious and popular Indian flatbread filled with a flavorful cauliflower stuffing. It's a great way to incorporate vegetables into your diet and is perfect for a hearty breakfast or a satisfying lunch.

Here's a recipe for Gobi Paratha:

Ingredients:

 * For the Dough:

   * 2 cups whole wheat flour (atta)

   * 1 teaspoon salt

   * 2 tablespoons oil

   * Water to knead

 * For the Filling:

   * 1 medium cauliflower, finely grated

   * 1 green chili, finely chopped

   * 1/2 teaspoon ginger-garlic paste

   * 1/2 teaspoon red chili powder

   * 1/4 teaspoon turmeric powder

   * 1/4 teaspoon garam masala

   * 1/4 teaspoon cumin powder

   * Salt to taste

   * 1 tablespoon oil

   * Fresh coriander leaves, chopped (for garnish)

Instructions:

 * Make the Dough:

   * In a large bowl, combine whole wheat flour, salt, and oil.

   * Gradually add water and knead into a soft and pliable dough.

   * Cover and let it rest for at least 30 minutes.

 * Prepare the Filling:

   * Heat oil in a pan.

   * Add cumin seeds and let them splutter.

   * Add ginger-garlic paste and green chili. Sauté for a minute.

   * Add grated cauliflower and cook for 5-7 minutes, or until slightly softened.

   * Add red chili powder, turmeric powder, garam masala, salt, and coriander powder. Mix well and cook for another 2-3 minutes.

   * Remove from heat and let it cool slightly.

 * Make the Parathas:

   * Divide the dough into equal portions.

   * Roll out each portion into a thin circle.

   * Place a spoonful of the cauliflower filling in the center of each circle.

   * Bring the edges of the dough together to enclose the filling.

   * Gently roll out the paratha into a slightly thicker circle.

 * Cook the Parathas:

   * Heat a tawa or griddle over medium heat.

   * Cook the parathas on both sides, applying a little oil or ghee to each side, until golden brown and cooked through.

 * Serve:

   * Serve hot Gobi Parathas with butter, ghee, yogurt, or pickle.

Tips:

 * For extra flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.

 * You can adjust the spice level according to your preference.

 * If the dough is too dry, add a little more water. If it's too sticky, add a little more flour.

 * You can also add chopped onions or green peas to the cauliflower filling.
