Tofu Tikka Masala recipe

 

Tofu Tikka Masala Recipe
Yields: 4 servings
Prep time: 30 minutes
Cook time: 20 minutes
Ingredients:
 * For the marinade:
   * 1 block (14 oz) extra-firm tofu, pressed and cubed
   * 1/2 cup plain yogurt
   * 1 tablespoon lemon juice
   * 1 teaspoon garam masala
   * 1/2 teaspoon ground cumin
   * 1/4 teaspoon ground coriander
   * 1/4 teaspoon turmeric
   * 1/4 teaspoon red chili powder (adjust to taste)
   * Salt to taste
 * For the sauce:
   * 1 tablespoon olive oil
   * 1 onion, chopped
   * 2 cloves garlic, minced
   * 1-inch piece ginger, grated
   * 1 (14.5 oz) can diced tomatoes, undrained
   * 1 (15 oz) can tomato sauce
   * 1 tablespoon tomato paste
   * 1 teaspoon garam masala
   * 1/2 teaspoon ground cumin
   * 1/4 teaspoon ground coriander
   * 1/4 teaspoon red chili powder (adjust to taste)
   * 1/4 cup heavy cream (optional)
   * Salt to taste
   * Fresh cilantro, chopped, for garnish
Instructions:
 * Make the marinade: In a bowl, combine all the marinade ingredients. Add the tofu cubes and toss to coat evenly. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
 * Make the sauce: Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute more.
 * Add the diced tomatoes, tomato sauce, tomato paste, garam masala, cumin, coriander, and chili powder. Bring to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally.
 * If using, stir in the heavy cream and cook for 1 minute more. Season with salt to taste.
 * Cook the tofu: While the sauce simmers, heat a grill pan or skillet over medium-high heat. Add the marinated tofu cubes and cook until golden brown and slightly crispy on all sides, about 5 minutes per side.
 * Combine and serve: Add the cooked tofu to the sauce and gently stir to coat. Serve hot, garnished with fresh cilantro.
Tips:
 * For a spicier dish, add more red chili powder to both the marinade and the sauce.
 * If you don't have heavy cream, you can use coconut milk or omit it altogether.
 * Serve the tofu tikka masala with basmati rice, naan, or roti.
