 Homemade Potato Gnocchi Recipe

Yields: 4 servings

Prep time: 30 minutes

Cook time: 5 minutes

Ingredients:

 * 2 pounds russet potatoes, peeled

 * 1 large egg

 * 1 cup all-purpose flour, plus more for dusting

 * 1/2 teaspoon salt

 * 1/4 teaspoon freshly ground black pepper

 * Sauce of your choice (tomato sauce, pesto, brown butter and sage, etc.)

Instructions:

 * Cook the potatoes: Place the potatoes in a large pot of cold salted water. Bring to a boil and cook until tender, about 20-25 minutes. Drain the potatoes and let them cool slightly.

 * Make the gnocchi dough: Once the potatoes are cool enough to handle, use a potato ricer to press the potatoes into a large bowl. Add the egg, flour, salt, and pepper. Mix well with a fork until a dough forms.

 * Shape the gnocchi: Dust a work surface with flour. Divide the dough into four equal pieces. Roll each piece into a long rope about 1 inch in diameter. Cut the ropes into 1-inch pieces.

 * Create the ridges: Using the back of a fork, press down on each piece of dough to create ridges. This helps the sauce cling to the gnocchi.

 * Cook the gnocchi: Bring a large pot of salted water to a boil. Gently add the gnocchi to the boiling water. Cook for 2-3 minutes, or until they float to the surface.

 * Serve: Drain the gnocchi and toss with your favorite sauce. Serve immediately.

Tips:

 * For extra flavor, add a pinch of nutmeg to the dough.

 * If the dough is too sticky, add a little more flour, 1 tablespoon at a time.

 * If the dough is too dry, add a little bit of water, 1 teaspoon at a time.

 * Gnocchi can also be frozen. Place them on a baking sheet lined with parchment paper and freeze until solid. Transfer the frozen gnocchi to a freezer bag and store for up to 3 months.

 * To cook frozen gnocchi, add them directly to the boiling water without thawing.
