 Here's a classic recipe for delicious enchiladas:

Yields: 6 servings

Prep time: 20 minutes

Cook time: 20 minutes

Ingredients:

 * 1 pound ground beef

 * 1 onion, chopped

 * 1 (10 ounce) can enchilada sauce

 * 1 (10 ounce) can diced tomatoes and green chilies

 * 1 (15 ounce) can black beans, rinsed and drained

 * 1 cup shredded cheddar cheese

 * 8 flour tortillas

 * Olive oil

 * Salt and pepper to taste

Instructions:

 * Brown the ground beef: Heat a large skillet over medium heat with a drizzle of olive oil. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain off any excess grease.

 * Sauté the onion: Add the chopped onion to the skillet and cook until softened, about 5 minutes.

 * Combine ingredients: Stir in the enchilada sauce, diced tomatoes and green chilies, black beans, and half of the shredded cheese. Season with salt and pepper to taste.

 * Warm the tortillas: While the filling simmers, warm the tortillas according to package directions. This will make them easier to roll.

 * Assemble the enchiladas: Pour a small amount of the enchilada sauce into the bottom of a 9x13 inch baking dish. Fill each tortilla with about 1/4 cup of the beef mixture. Roll up the tortillas and place them seam-side down in the baking dish.

 * Top and bake: Pour the remaining enchilada sauce over the enchiladas and top with the remaining shredded cheese. Bake at 350°F for 15-20 minutes, or until the cheese is melted and bubbly.

 * Serve: Let the enchiladas stand for a few minutes before serving. Garnish with additional chopped cilantro or green onions, if desired.

Tips:

 * For a spicier enchilada, use a hot enchilada sauce or add a diced jalapeño pepper to the filling.

 * You can substitute ground chicken or turkey for the ground beef.

 * To make these vegetarian, omit the ground beef and add extra vegetables to the filling, such as chopped bell peppers or corn.

 * Serve these enchiladas with your favorite Mexican sides, such as rice, beans, guacamole, or salsa.
