 * Ingredients:

   * 1.5 lbs salmon fillets, skin on

   * 2 lemons, 1 thinly sliced and 1 juiced

   * 2 cloves garlic, minced

 * Ingredients:

   * 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

   * 1 cup broccoli florets

   * 1 cup carrots, sliced

   * 1/2 cup onion, sliced

   * 1/4 cup bell pepper, sliced

   * 2 cloves garlic, minced

   * 1 tablespoon ginger, minced

   * 2 tablespoons stir-fry sauce (such as teriyaki or oyster sauce)

 * Instructions:

   * In a bowl, combine chicken with soy sauce and cornstarch.

   * Heat olive oil in a large skillet or wok over medium-high heat.

   * Add chicken and cook until browned, about 5 minutes.

   * Remove chicken from skillet and set aside.

   * Add broccoli, carrots, onion, and bell pepper to skillet. Cook until softened, about 5 minutes.

   * Add garlic and ginger and cook for 1 minute more.

   * Return chicken to skillet and add stir-fry sauce. Cook until sauce is thickened, about 2 minutes.

   * Serve over rice or noodles.

3. Simple Tomato Soup

 * Ingredients:

   * 2 tablespoons olive oil

   * 1 onion, chopped

   * 2 cloves garlic, minced

   * 1 (28 ounce) can crushed tomatoes

   * 1 (14.5 ounce) can diced tomatoes

   * 4 cups vegetable broth

   * 1 teaspoon dried oregano

   * 1/2 teaspoon dried basil

   * Salt and pepper to taste

   * Fresh basil for garnish (optional)

 * Instructions:

   * Heat olive oil in a large pot over medium heat.

   * Add onion and garlic and cook until softened, about 5 minutes.

   * Add crushed tomatoes, diced tomatoes, vegetable broth, oregano, and basil.

   * Bring to a simmer and cook for 20 minutes, or until flavors have blended.

   * Season with salt and pepper to taste.

   * Puree soup with an immersion blender or in batches in a blender.

   * Serve hot, garnished with fresh basil (optional).
