Ingredients

For the Pasta

12 oz pasta (such as penne, rigatoni, or spaghetti)

Salt, for pasta water

For the Sausage and Sauce

2 tbsp olive oil

4 sweet apple chicken sausages (remove casings if necessary)

1 small onion, diced

2 cloves garlic, minced

1/2 cup chicken broth

1/2 cup heavy cream (or half-and-half for a lighter version)

1/4 cup grated Parmesan cheese

1 tbsp fresh sage, chopped (or 1 tsp dried sage)

Salt and pepper, to taste

Red pepper flakes, to taste (optional)

For Garnish

Fresh parsley, chopped (optional)

Extra grated Parmesan cheese

---

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil.

Cook the pasta according to the package instructions until al dente.

Drain the pasta, reserving 1/2 cup of pasta water. Set aside.

2. Cook the Sausage

While the pasta cooks, heat 2 tbsp of olive oil in a large skillet over medium heat.

Add the sweet apple chicken sausages, breaking them up with a spoon as they cook.

Cook for about 6-7 minutes, or until browned and fully cooked.

Remove the cooked sausage from the skillet and set it aside.

3. Make the Sauce

In the same skillet, add the diced onion and sauté for about 3-4 minutes, or until softened.

Add the garlic and cook for another 1-2 minutes, until fragrant.

Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.

Stir in the heavy cream and bring to a simmer. Let the sauce cook for 2-3 minutes until it thickens slightly.

4. Combine Everything

Add the cooked sausage back into the skillet, along with the cooked pasta.

Toss everything together, adding a little reserved pasta water if the sauce needs to be thinned.

Stir in the Parmesan cheese, fresh sage, salt, and pepper. Adjust seasoning as needed.

For a little heat, add red pepper flakes if desired.

5. Serve

Divide the pasta into serving bowls and garnish with fresh parsley and extra Parmesan cheese.

Serve immediately and enjoy!

Tips

If you want a lighter version, you can use reduced-fat cream or substitute it with a plant-based milk, such as almond milk, and a tablespoon of flour to thicken.

You can swap in other types of sausage, such as turkey sausage or pork sausage, but sweet apple chicken sausage adds a nice balance of savory and sweet flavors.

For added texture and flavor, try adding some sautéed spinach or kale to the pasta.

Enjoy your Sweet Apple Chicken Sausage Pasta, a deliciously creamy and savory dish with a touch of sweetness from the sausage!
