Ingredients


For the Casserole


2 cups cooked chicken breast, shredded or diced


1 1/2 cups cooked brown rice (or white rice)

Instructions


1. Prepare the Broccoli and Rice


Steam or blanch the broccoli florets until tender (about 3-4 minutes) and chop into bite-sized pieces.


Cook the brown rice according to package instructions if not using leftover rice.



2. Sauté the Aromatics


Preheat your oven to 350°F (175°C).


In a large skillet, heat 1 tbsp olive oil over medium heat.


Add the diced onion and garlic and sauté for about 3-4 minutes, until softened and fragrant.
