4 boneless, skinless chicken breasts

1 tbsp olive oil

Salt and pepper, to taste

1 1/2 cups shredded mozzarella cheese

1/2 cup pepperoni slices (optional)

1/4 cup sliced black olives (optional)

1/4 cup chopped red onion (optional)

1 tsp dried oregano

1 tsp dried basil

Fresh basil or parsley, chopped (for garnish)

Instructions:

1. Preheat the Oven:

Preheat your oven to 375°F (190°C).

2. Prepare the Chicken:

1. Season both sides of the chicken breasts with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat.

3. Add the chicken breasts to the pan and cook for 3-4 minutes on each side until golden brown (it doesn't need to be fully cooked at this point as it will bake in the oven).

3. Top the Chicken:

1. Transfer the chicken breasts to a baking dish.

2. Spoon about 2-3 tablespoons of marinara or pizza sauce on each chicken breast.

3. Sprinkle with mozzarella cheese and any optional toppings, such as pepperoni, olives, or red onion.

4. Sprinkle dried oregano and basil over the top.

4. Bake:

Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.

5. Serve:

Garnish with fresh basil or parsley, and serve with a side of vegetables, salad, or cauliflower rice.

Tips:

For a low-carb option, use a sugar-free pizza sauce.

Try adding other pizza toppings, like bell peppers, mushrooms, or sausage, for variety.

You can also use chicken thighs for a juicier version.
