1 tsp garlic powder


1 tsp dried oregano

1/4 cup fresh basil, chopped


1 clove garlic, minced


2 tbsp balsamic vinegar


1 tbsp olive oil


Salt and pepper, to taste



For the Mozzarella:


1 1/2 cups shredded mozzarella cheese (or fresh mozzarella slices)



Optional Garnish:


Fresh basil leaves, for garnish


Balsamic glaze (optional, for drizzling)

Instructions:


1. Prepare the Chicken:


1. Preheat your oven to 375°F (190°C).



2. Season the chicken breasts with salt, pepper, garlic powder, and dried oregano.



3. Heat olive oil in a large oven-safe skillet over medium-high heat.



4. Add the chicken breasts to the skillet and cook for 3-4 minutes per side, until golden brown. The chicken doesn't need to be fully cooked at this point; it will finish baking in the oven.

1. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper. Stir well to combine and set aside.
