Easy Chicken Fried Rice

 Easy Chicken Fried Rice is a quick, one-pan dish that’s packed with flavor and a great way to use up leftover rice. It’s a perfect meal for busy weeknights!

Ingredients:


2 tbsp vegetable oil


1 lb boneless, skinless chicken breasts or thighs, diced


2 eggs, lightly beaten


2 cloves garlic, minced


1 small onion, diced


1 cup frozen peas and carrots (or mixed veggies)


4 cups cooked rice (preferably day-old rice)


3 tbsp soy sauce (adjust to taste)


1 tbsp sesame oil (optional, for extra flavor)


1/2 tsp ground black pepper


2 green onions, chopped (for garnish)

Instructions:


1. Cook the Chicken:


1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.



2. Add the diced chicken, season with a pinch of salt and pepper, and cook until golden and cooked through, about 6-7 minutes. Remove the chicken from the pan and set aside.




2. Scramble the Eggs:


1. In the same pan, add the remaining oil and reduce the heat to medium.



2. Pour in the beaten eggs and scramble, cooking for 1-2 minutes until just set. Remove the eggs and set them aside with the chicken.




3. Sauté the Veggies:


1. Add the diced onion and garlic to the pan, sautéing for 1-2 minutes until fragrant and softened.



2. Stir in the peas and carrots (or mixed veggies), cooking for another 2 minutes until heated through.




4. Add the Rice:


1. Add the cooked rice to the pan, breaking up any clumps. Stir well to mix with the veggies.



2. Add the soy sauce, sesame oil (if using), and black pepper. Stir to evenly coat the rice.




5. Combine Everything:


1. Return the cooked chicken and scrambled eggs to the pan. Stir everything together and cook for 2-3 minutes, allowing the flavors to combine and the rice to heat through.




6. Serve:


Garnish with chopped green onions and serve hot.

For extra flavor, add a splash of rice vinegar or a drizzle of hoisin sauce.


Use leftover chicken or rotisserie chicken to save time.
