Grilled Chicken Salad

 Grilled Chicken Salad is a healthy, versatile dish packed with fresh vegetables, tender chicken, and a flavorful dressing. Perfect for a light lunch or dinner!

Ingredients:


For the Chicken:


2 boneless, skinless chicken breasts


2 tbsp olive oil


1 tbsp lemon juice


1 tsp garlic powder


1 tsp paprika


1/2 tsp dried oregano


Salt and pepper, to taste



For the Salad:


6 cups mixed greens (spinach, arugula, or romaine)


1 cup cherry tomatoes, halved


1 cucumber, sliced


1/2 red onion, thinly sliced


1/4 cup Kalamata olives (optional)


1/2 avocado, sliced


1/4 cup crumbled feta cheese (optional)



For the Dressing:


3 tbsp olive oil


2 tbsp red wine vinegar or lemon juice


1 tsp Dijon mustard


1 clove garlic, minced


Salt and pepper, to taste

Instructions:


1. Prepare the Chicken:


1. Preheat a grill or grill pan over medium-high heat.



2. In a small bowl, mix olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper.



3. Brush the marinade onto the chicken breasts.



4. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).



5. Remove from the grill and let rest for 5 minutes before slicing.

1. Arrange the mixed greens in a large bowl or on a serving platter.



2. Top with cherry tomatoes, cucumber, red onion, olives, avocado, and feta cheese.
