Ingredients:


For the Salad:


2 cans (5 oz each) of tuna in olive oil or water, drained (or 2 cups of cooked tuna)


1 cup cherry tomatoes, halved


1/2 cucumber, diced


1/4 cup red onion, thinly sliced


1/4 cup Kalamata olives, pitted and sliced


1/4 cup feta cheese, crumbled


1/4 cup fresh parsley, chopped


1/4 cup roasted red peppers, sliced (optional)


1 tbsp capers (optional)



For the Dressing:


3 tbsp extra virgin olive oil


2 tbsp red wine vinegar or lemon juice


1 tsp Dijon mustard


1 tsp dried oregano


1 garlic clove, minced


Salt and pepper, to taste



Instructions:


1. Prepare the Salad Ingredients:


In a large bowl, add the drained tuna. Use a fork to break the tuna into chunks.


Add the cherry tomatoes, cucumber, red onion, olives, feta cheese, parsley, roasted red peppers, and capers (if using) to the bowl.




2. Make the Dressing:


In a small bowl or jar, whisk together the olive oil, red wine vinegar (or lemon juice), Dijon mustard, dried oregano, minced garlic, salt, and pepper. Taste and adjust seasoning as needed.




3. Assemble the Salad:


Drizzle the dressing over the salad and toss gently to combine all the ingredients.

Serve the salad immediately as a refreshing, light meal. It can also be chilled for 20-30 minutes before serving for a colder dish.





Tips:
