 Lighter Broccoli Beef


Ingredients:


1 lb lean flank steak or sirloin, thinly sliced against the grain


2 cups broccoli florets


1 tbsp olive oil


3 cloves garlic, minced


1/4 cup low-sodium soy sauce


2 tbsp oyster sauce


1 tbsp hoisin sauce


1 tbsp rice vinegar


1 tsp sesame oil


1 tsp grated ginger


1 tsp cornstarch (optional for thickening)


1/4 cup water or low-sodium beef broth


1/2 tsp red pepper flakes (optional for heat)


Salt and pepper, to taste


Cooked brown rice or cauliflower rice, for serving

Instructions:


1. Prepare the Beef:


Slice the flank steak (or sirloin) into thin strips, about 1/4 inch thick. Season with a pinch of salt and pepper.




2. Blanch the Broccoli:


Bring a pot of water to a boil. Add the broccoli florets and cook for 2-3 minutes until bright green and tender-crisp. Drain and set aside.




3. Cook the Beef:


Heat olive oil in a large skillet or wok over medium-high heat.


Add the beef and cook for 2-3 minutes until browned and cooked through. Remove from the skillet and set aside.




4. Make the Sauce:


In the same skillet, add minced garlic and grated ginger. Cook for 30 seconds until fragrant.


Stir in soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes (if using). Bring to a simmer.




5. Combine and Cook:


In a small bowl, mix cornstarch with water or beef broth to create a slurry. Add it to the skillet to thicken the sauce (optional).


Add the cooked beef and broccoli back into the skillet. Stir to coat the beef and broccoli in the sauce. Cook for 2-3 minutes, until everything is heated through and the sauce has thickened slightly.




6. Serve:


Serve the broccoli beef over brown rice or cauliflower rice for a lighter, healthier option.
