Taco Chili
Ingredients:
1 lb ground beef (or ground turkey)
1 medium onion, chopped
3 cloves garlic, minced
1 packet taco seasoning (or homemade seasoning)
1 can (15 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (4 oz) diced green chilies
1 cup beef broth or chicken broth
1 tbsp olive oil
1/2 tsp ground cumin
1/2 tsp chili powder (adjust for heat)
Salt and pepper to taste
Optional toppings: sour cream, shredded cheese, green onions, jalapeño slices, cilantro

Instructions:
1. Cook the Meat:
Heat olive oil in a large pot or Dutch oven over medium heat.
Add chopped onion and minced garlic, cooking for about 2-3 minutes until softened.
Add ground beef (or turkey) to the pot. Cook, breaking it up with a spoon, until browned (about 5-7 minutes). Drain any excess fat.
2. Add Seasonings and Liquids:
Stir in taco seasoning, cumin, chili powder, salt, and pepper.
Add diced tomatoes, beans, corn, green chilies, and broth. Stir everything together.
3. Simmer:
Bring the chili to a simmer. Reduce heat to low and let it cook, uncovered, for 20-30 minutes to allow the flavors to meld together. Stir occasionally.
4. Serve:
Once the chili has thickened and the flavors have developed, ladle it into bowls.
Top with your favorite toppings such as sour cream, shredded cheese, green onions, jalapeños, or cilantro.
