Instant Pot Pumpkin Walnut Chili

Instant Pot Pumpkin Walnut Chili is a hearty, comforting dish with the richness of pumpkin and the crunch of walnuts. The Instant Pot makes it quick and easy, and the combination of spices, beans, and pumpkin creates a deliciously warming chili perfect for fall or any time you're craving a nourishing meal. Here’s how to make it:

Ingredients:

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, chopped

1 medium carrot, chopped

1 can (15 oz) pumpkin puree (not pumpkin pie filling)

1 can (15 oz) diced tomatoes (with juices)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 cup vegetable broth (or water)

1/2 cup walnuts, chopped

1 tablespoon chili powder

1 teaspoon ground cumin

1/2 teaspoon ground cinnamon (optional, for warmth)

1/4 teaspoon ground nutmeg (optional, for depth)

Salt and pepper to taste

1 tablespoon maple syrup (optional, for sweetness)

Fresh cilantro for garnish (optional)

Vegan sour cream or plain yogurt (optional, for topping)

Instructions:

1. Sauté the vegetables:

Set the Instant Pot to “Sauté” mode. Add the olive oil and allow it to heat. Add the chopped onion, garlic, bell pepper, and carrot. Sauté for 5-7 minutes, until softened and fragrant.

2. Add the pumpkin and spices:

Stir in the pumpkin puree, diced tomatoes, chili powder, cumin, cinnamon, nutmeg, and salt and pepper. Mix to combine.

3. Add the beans, walnuts, and broth:

Add the kidney beans, black beans, chopped walnuts, and vegetable broth to the pot. Stir to combine.

4. Pressure cook:

Secure the Instant Pot lid, set the valve to “Sealing,” and select “Manual” or “Pressure Cook” on high for 10 minutes.

5. Release the pressure:

Once the cooking time is complete, allow the Instant Pot to naturally release pressure for about 10 minutes, then carefully perform a quick release to let out any remaining pressure.

6. Finish and serve:

Open the Instant Pot and taste the chili. Add maple syrup for sweetness if desired, and adjust seasoning with more salt or chili powder if necessary. Serve hot, garnished with fresh cilantro and a dollop of sour cream or yogurt if you like.

Instant Pot Pumpkin Walnut Chili is a warming, flavorful, and satisfying meal that combines the natural sweetness of pumpkin with savory spices, hearty beans, and crunc

hy walnuts. It’s a perfect dish for a cozy dinner or a fall-inspired meal.
