Golden Soup

 Golden Soup is a vibrant, comforting, and nutritious soup packed with warm, earthy flavors from ingredients like turmeric, carrots, and potatoes. It's perfect for when you want something hearty, light, and healing. Here’s a simple recipe to make it:


Ingredients:


1 tablespoon olive oil or coconut oil


1 medium onion, chopped


2 cloves garlic, minced


3 medium carrots, peeled and sliced


2 medium potatoes, peeled and diced


1 teaspoon ground turmeric


1/2 teaspoon ground cumin (optional, for extra warmth)


Salt and pepper to taste


4 cups vegetable or chicken broth


1/2 cup coconut milk (optional, for creaminess)


1 tablespoon fresh lemon juice (optional, for brightness)


Fresh parsley or cilantro, for garnish (optional)



Instructions:


1. Sauté the vegetables:


Heat the olive oil or coconut oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 5-7 minutes until softened and fragrant.



2. Add the spices:


Stir in the turmeric, cumin (if using), salt, and pepper. Cook for another 1-2 minutes to let the spices bloom and become fragrant.



3. Add the carrots and potatoes:


Add the sliced carrots and diced potatoes to the pot. Stir to combine with the onions and spices.



4. Add the broth:
