Ingredients:


2 tablespoons olive oil


1 lb boneless, skinless chicken thighs or breasts, cut into chunks


1 medium onion, chopped


2 cloves garlic, minced


3 medium carrots, peeled and sliced


2 celery stalks, chopped


2 medium potatoes, peeled and diced


1 teaspoon dried thyme


1 teaspoon dried rosemary


1 bay leaf


Salt and pepper to taste


4 cups chicken broth


1 cup frozen peas (optional)


1/4 cup heavy cream or half-and-half (optional, for creaminess)


Fresh parsley for garnish (optional)



Instructions:


1. Cook the chicken:


Heat the olive oil in a large pot over medium heat. Add the chicken chunks and cook for about 5-7 minutes, until browned on all sides. Remove the chicken from the pot and set it aside.



2. Sauté the vegetables:


In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes, until the vegetables are softened.



3. Add the potatoes and seasonings:


Add the diced potatoes, dried thyme, rosemary, bay leaf, salt, and pepper to the pot. Stir to combine.



4. Add the broth and simmer:


Pour in the chicken broth, scraping any browned bits off the bottom of the pot. Bring to a simmer, then reduce the heat to low and cook for 20-25 minutes, or until the potatoes and vegetables are tender.



5. Add the chicken and peas:


Return the cooked chicken to the pot, along with the frozen peas. Simmer for another 5-7 minutes until the peas are heated through and the chicken is fully cooked.

For a creamier stew, stir in the heavy cream or half-and-half. Taste and adjust the seasoning with more salt and pepper if needed.
