Beef Taco Bowls
Ingredients:
1 lb ground beef (or ground turkey for a leaner option)
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 packet taco seasoning (or homemade taco seasoning)
1/2 cup beef broth (or water)
1 cup cooked rice (white, brown, or cauliflower rice for a low-carb option)
1 cup black beans, drained and rinsed (optional)
1 cup corn kernels (fresh, frozen, or canned)
1 medium tomato, diced
1/2 cup shredded lettuce
1/2 cup shredded cheddar cheese
1/2 cup sour cream (optional, for topping)
Salsa, guacamole, or pico de gallo (optional, for topping)
Fresh cilantro, chopped (optional, for garnish)
Lime wedges (optional, for serving)
---
Instructions:
1. Cook the Ground Beef:
In a large skillet, heat olive oil over medium-high heat.
Add the ground beef and cook, breaking it apart with a spoon, until browned (about 5-7 minutes).
Drain any excess fat and return the beef to the skillet.
2. Add Seasoning:
Stir in the chopped onion and minced garlic, cooking for 2-3 minutes until softened.
Add taco seasoning and beef broth (or water). Stir well and let simmer for 5-7 minutes, or until the liquid has reduced and the beef is coated with the seasoning.
3. Prepare the Bowl Base:
While the beef is simmering, prepare the rice according to package instructions. For a low-carb option, cook cauliflower rice instead.
Warm the black beans and corn, if using, in a separate pan or microwave.
4. Assemble the Taco Bowls:
In individual bowls, layer the cooked rice at the bottom.
Top with the seasoned ground beef mixture, followed by black beans and corn.
5. Add Fresh Toppings:
Add diced tomatoes, shredded lettuce, shredded cheese, and any additional toppings like sour cream, salsa, guacamole, or pico de gallo.
Garnish with fresh cilantro and lime wedges for extra flavor.
6. Serve:
Serve the taco bowls immediately and enjoy a delicious, customizable, and easy-to-make meal!
