Vada Pav Recipe (Mumbai Street Style)

 


Yields: 4 servings

Cook time: 20 minutes

Ingredients:

For the Vada:

 * 2 medium potatoes, boiled and mashed

 * 1/2 cup gram flour (besan)

 * 2 green chilies, finely chopped

 * 1 inch ginger, grated

 * 1/4 teaspoon turmeric powder

 * 1/2 teaspoon red chili powder

 * 1/4 teaspoon asafoetida (hing)

 * Salt to taste

 * Oil for deep frying

For the Pav:

 * 4 pav buns (burger buns)

 * Green chutney (recipe below)

 * Red garlic chutney (recipe below)

For Green Chutney:

 * 1 cup coriander leaves

 * 2 green chilies

 * 1 inch ginger

 * 1/2 teaspoon cumin seeds

 * 1/4 teaspoon salt

 * 1 tablespoon water

 * Juice of 1/2 lime

For Red Garlic Chutney:

 * 2 cloves garlic

 * 1/2 teaspoon red chili powder

 * 1/4 teaspoon cumin powder

 * 1/4 teaspoon salt

 * 1 tablespoon oil

Instructions:

1. Make the Vada:

 * In a bowl, combine mashed potatoes, gram flour, green chilies, ginger, turmeric powder, red chili powder, asafoetida, and salt. Mix well to form a dough.

 * Shape the dough into small round patties.

 * Heat oil in a deep pan.

 * Carefully drop the vada patties into the hot oil and fry until golden brown and crispy.

 * Drain the vadas on paper towels.

2. Make the Green Chutney:

 * In a blender, combine coriander leaves, green chilies, ginger, cumin seeds, salt, water, and lime juice.

 * Blend until smooth.

3. Make the Red Garlic Chutney:

 * Heat oil in a pan. Add garlic and sauté until golden brown.

 * Add red chili powder, cumin powder, and salt.

 * Cook for a minute, then remove from heat and let it cool.

4. Assemble the Vada Pav:

 * Cut the pav buns in half.

 * Apply a generous layer of green chutney on one half of the bun.

 * Place a vada on top.

 * Sprinkle with red garlic chutney.

 * Cover with the other half of the bun.

Serve immediately and enjoy your homemade Mumbai-style Vada Pav!

Tips:

 * For extra flavor, add a pinch of garam masala to the vada mixture.

 * You can adjust the spice level of the chutneys according to your preference.

 * Serve Vada Pav with chopped onions and sev for extra crunch.
