Scallion Pancake with Eggs

 Scallion pancakes with eggs is a delicious and savory dish often enjoyed for breakfast or as a snack. Here’s a basic recipe to make it:


Ingredients:


2 cups all-purpose flour


1 cup hot water


1 teaspoon salt


3-4 scallions, finely chopped


2 eggs


Vegetable oil for frying



Instructions:


1. Make the dough:


In a large bowl, mix the flour and salt. Gradually add the hot water, stirring with a chopstick or spoon until the dough comes together.


Knead the dough for about 5-7 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.




2. Prepare the pancakes:


Divide the dough into 4 equal portions. Roll each portion into a thin circle (about 8 inches in diameter).


Sprinkle a little salt and chopped scallions on top of each circle. Roll the dough up into a log, then coil it into a bun shape. Roll out each bun into a flat pancake again.




3. Cook the pancakes:


Heat a bit of oil in a pan over medium heat. Place the pancakes in the pan and cook for about 3-4 minutes on each side until golden and crispy. Remove from the pan and set aside.




4. Scramble the eggs:


In a separate pan, scramble the eggs over medium heat until fully cooked. Set aside.




5. Assemble:


Once the pancakes are cooked and slightly cooled, cut them into wedges and serve with the scrambled eggs on the side or inside the pancakes.
