Ingredients:


For the Chicken:


2 lbs boneless, skinless chicken thighs (or breasts)


1 tbsp olive oil


1 tsp ground cumin


1 tsp chili powder


1 tsp garlic powder


1 tsp onion powder


Salt and pepper, to taste


1 lime (for juice)


2 tbsp fresh cilantro, chopped



For the Green Sauce:


1 cup fresh cilantro, packed


2-3 medium tomatillos, husked and roughly chopped


1-2 jalapeños (adjust to desired spice level), seeds removed


1/2 small onion, roughly chopped


2 cloves garlic


1 tbsp olive oil


1 tbsp lime juice


Salt to taste


1/2 cup water (or more to adjust consistency)



For Assembly:


Small corn or flour tortillas


Sliced red onion


Fresh cilantro, chopped


Lime wedges


Avocado or guacamole (optional)

Instructions:


1. Cook the Chicken:


In a bowl, mix the cumin, chili powder, garlic powder, onion powder, salt, and pepper.


Rub the chicken thighs with olive oil, then coat them evenly with the spice mixture.
