Red lentil curry, also known as Masoor Dal, is a staple in Indian cuisine. It's a simple, flavorful, and comforting dish that's easy to make.

Here's a basic recipe for Red Lentil Curry:

Ingredients:

 * 1 cup red lentils, rinsed and picked

 * 4 cups water

 * 1 teaspoon turmeric powder

 * 1 teaspoon salt

 * 1 tablespoon oil

 * 1 teaspoon cumin seeds

 * 1 onion, chopped

 * 2 cloves garlic, minced

 * 1-inch piece ginger, grated

 * 1 green chili, slit lengthwise (optional)

 * 1/2 teaspoon red chili powder

 * 1/4 teaspoon garam masala

 * 1/4 teaspoon coriander powder

 * Fresh cilantro for garnish

 * Lemon wedges for serving

Instructions:

 * Cook the lentils: In a pressure cooker, combine the washed lentils, water, turmeric powder, and 1 teaspoon salt. Pressure cook for 3-4 whistles or until the lentils are soft. If using a pot, cook uncovered for about 30-40 minutes, adding more water if needed.

 * Make the tempering (tadka): Heat oil in a small pan. Add cumin seeds and let them splutter. Add chopped onion and saute until golden brown. Add ginger-garlic paste and green chili (if using) and cook for a minute.

 * Add spices and vegetables: Add chopped tomatoes, red chili powder, coriander powder, and garam masala. Cook until the tomatoes soften and release their juices.

 * Combine and simmer: Add the cooked lentils and their cooking liquid to the pan. Mix well and simmer for 5-10 minutes, or until the flavors meld.

 * Serve: Garnish with fresh cilantro and serve hot with rice, roti, or naan. Squeeze lemon wedges over each serving for added tanginess.

Tips:

 * For a richer flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.

 * To make the dal slightly tangy, add a pinch of amchur powder (dried mango powder) towards the end.

 * You can adjust the amount of spices according to your preference.

 * If you like your dal thicker, you can mash some of the lentils with a potato masher.
