1. Classic Vegetable Soup
 * Ingredients:
   * 1 tablespoon olive oil
   * 1 onion, chopped
   * 2 carrots, chopped
   * 2 celery stalks, chopped
   * 2 cloves garlic, minced
   * 1 potato, cubed
   * 1 cup frozen corn
   * 1 cup frozen peas
   * 1 (14.5 ounce) can diced tomatoes, undrained
   * 4 cups vegetable broth
   * 1 teaspoon dried oregano
   * 1/2 teaspoon dried basil
   * Salt and pepper to taste
 * Instructions:
   * Heat olive oil in a large pot over medium heat.
   * Add onion, carrots, and celery and cook until softened, about 5 minutes.
   * Add garlic and cook for 1 minute more.
   * Stir in potato, corn, peas, diced tomatoes, vegetable broth, oregano, and basil.
   * Bring to a simmer, then reduce heat and cook for 20-30 minutes, or until vegetables are tender.
   * Season with salt and pepper to taste.
2. Minestrone Soup
 * Ingredients:
   * 1 tablespoon olive oil
   * 1 onion, chopped
   * 2 carrots, chopped
   * 2 celery stalks, chopped
   * 2 cloves garlic, minced
   * 1 cup dried small pasta (like ditalini or orzo)
   * 1 (14.5 ounce) can diced tomatoes, undrained
   * 1 (15 ounce) can cannellini beans, drained and rinsed
   * 4 cups vegetable broth
   * 1/2 teaspoon dried oregano
   * 1/4 teaspoon dried basil
   * Salt and pepper to taste
   * Fresh basil for garnish (optional)
 * Instructions:
   * Heat olive oil in a large pot over medium heat.
