Kadhi Pakora

Kadhi Pakora is a beloved Indian dish featuring a tangy and flavorful yogurt-based curry (kadhi) and crispy fritters (pakoras). Here's a recipe to make this delicious dish at home:

Ingredients:

 * For the Kadhi:

   * 1 cup plain yogurt

   * 1/2 cup besan (gram flour)

   * 1 teaspoon turmeric powder

   * 1/2 teaspoon red chili powder

   * 1/4 teaspoon asafoetida

   * Salt to taste

   * Water as needed

   * 2 tablespoons oil

   * 1 teaspoon mustard seeds

   * 1/2 teaspoon cumin seeds

   * 1 sprig curry leaves

   * 1 green chili, slit

   * 1/2 teaspoon coriander powder

 * For the Pakoras:

   * 1 cup besan (gram flour)

   * 1/4 teaspoon turmeric powder

   * 1/4 teaspoon red chili powder

   * 1/2 teaspoon cumin seeds

   * Salt to taste

   * Water as needed

   * 1 onion, finely chopped

   * 1 green chili, finely chopped

   * 1/2 teaspoon ginger-garlic paste (optional)

   * Oil for deep frying

Instructions:

1. Make the Kadhi:

 * In a bowl, whisk together yogurt, besan, turmeric powder, red chili powder, asafoetida, and salt until smooth.

 * Gradually add water, whisking continuously to avoid lumps. The batter should be slightly thinner than pancake batter.

 * Heat oil in a saucepan. Add mustard seeds, cumin seeds, curry leaves, and green chili. Let them splutter.

 * Pour the kadhi batter into the saucepan and stir continuously to prevent curdling.

 * Cook on low heat for 15-20 minutes, stirring occasionally, until the kadhi thickens.

 * Add coriander powder and simmer for a few more minutes.

2. Make the Pakoras:

 * In a bowl, combine besan, turmeric powder, red chili powder, cumin seeds, salt, onion, green chili, and ginger-garlic paste (if using).

 * Add water gradually to make a thick batter.

 * Heat oil in a deep pan for deep frying.

 * Drop spoonfuls of batter into the hot oil and fry until golden brown and crispy.

 * Remove the pakoras from the oil and drain on paper towels.

3. Assemble and Serve:

 * Add the fried pakoras to the simmering kadhi.

 * Simmer for a few minutes to allow the pakoras to soak up some of the flavors.

 * Serve hot with steamed rice or roti.

Tips:

 * For a richer flavor, you can temper the kadhi with a tadka of cumin seeds, mustard seeds, and curry leaves.

 * You can add vegetables like cauliflower, spinach, or potatoes to the pakora batter.

 * Adjust the spice level according to your preference.

 * Serve kadhi pakora with a dollop of yogurt or a side of raita.
