Indian Rice Pudding (Kheer)
Kheer, also known as Firni, is a classic Indian dessert made with rice, milk, sugar, and spices. It's a comforting and flavorful treat that's perfect for any occasion.
Ingredients:
* 1/4 cup basmati rice
* 4 cups whole milk
* 1/4 cup sugar (or to taste)
* 1/4 teaspoon cardamom powder
* A pinch of saffron strands (optional)
* 1/4 cup chopped nuts (almonds, cashews, pistachios)
* Raisins (optional)
* A few drops of rose water (optional)
Instructions:
* Wash and soak rice: Rinse the rice thoroughly under cold water until the water runs clear. Soak the rice in water for at least 30 minutes.
* Boil milk and rice: In a heavy-bottomed pot or saucepan, bring the milk to a boil over medium heat. Add the soaked rice and reduce heat to low.
* Simmer and stir: Simmer gently, stirring occasionally, for about 20-25 minutes, or until the rice is cooked through and the milk has reduced slightly.
* Add sugar and spices: Add sugar and cardamom powder to the pot. Stir well and continue to simmer for another 5-7 minutes, or until the sugar dissolves and the mixture thickens slightly.
* Add saffron (optional): If using saffron, crush the strands lightly and add them to the kheer. Let it simmer for a few more minutes to infuse the saffron flavor.
* Add nuts and raisins (optional): Stir in the chopped nuts and raisins (if using).
* Cool and serve: Remove the pot from heat and let the kheer cool slightly. Garnish with additional chopped nuts and raisins (if desired). Serve warm or chilled.
Tips:
* For a richer flavor, you can use full-fat milk or a combination of milk and cream.
* You can add a pinch of nutmeg or cinnamon to the kheer for extra flavor.
* To make the kheer extra creamy, you can mash some of the cooked rice with a potato masher.
* Garnish the kheer with slivered almonds, pistachios, or rose petals for a beautiful presentation.
