Homemade Tahini: A Simple Guide

Tahini, a sesame seed paste, is a cornerstone of Middle Eastern cuisine, adding a nutty richness to hummus, baba ghanoush, and more. Making your own is surprisingly easy!

Ingredients:

 * 1 cup hulled sesame seeds

 * 2-3 tablespoons neutral oil (like grapeseed or canola)

 * Pinch of salt (optional)

Equipment:

 * Food processor or high-powered blender

Instructions:

 * Toast the sesame seeds:

   * Heat a dry skillet over medium heat.

   * Add the sesame seeds and toast, stirring constantly, until fragrant and lightly golden (about 5 minutes).

   * Be careful not to burn them!

   * Remove from heat and let cool completely.

 * Grind the seeds:

   * Place the cooled sesame seeds in a food processor.

   * Pulse for a few seconds to break them down.

   * Add 2 tablespoons of oil and process for 1-2 minutes, scraping down the sides as needed.

   * The mixture will become crumbly at first, then start to come together.

 * Adjust consistency:

   * If the tahini is too thick, add another tablespoon of oil and process until smooth.

   * If it's too thin, add a little more sesame seeds.

 * Season and store:

   * Stir in a pinch of salt, if desired.

   * Transfer the tahini to a jar and store in the refrigerator for up to 3 months.

Tips:

 * Hulled vs. Unhulled: Hulled sesame seeds make a smoother tahini, while unhulled seeds have a slightly more intense flavor and a slightly coarser texture.

 * Oil matters: The type of oil you use can affect the flavor. Neutral oils like grapeseed or canola are best.

 * Separation: Tahini can sometimes separate. Simply stir it well before each use.
