Gulab Jamun Recipe

Ingredients:
For the Gulab Jamun:
* 1 cup milk powder
* 1/4 cup all-purpose flour
* 1/4 teaspoon baking powder
* 1/8 teaspoon baking soda
* 1/4 cup melted ghee
* 1/4 cup milk (or more as needed)
* 1 tablespoon chopped pistachios (for garnish)
For the Sugar Syrup:
* 1 cup sugar
* 1/2 cup water
* 1/4 teaspoon cardamom powder
* A few saffron strands (optional)
Instructions:
1. Make the Gulab Jamun Dough:
* In a bowl, combine milk powder, flour, baking powder, and baking soda.
* Add melted ghee and milk gradually, mixing well to form a soft dough.
* Knead gently for a few minutes until smooth. The dough should be pliable but not sticky. If it's too dry, add a little more milk.
* Cover the dough and let it rest for 15-20 minutes.
2. Shape the Gulab Jamuns:
* Divide the dough into small lemon-sized balls.
* Gently roll them in your palms to make smooth balls.
3. Make the Sugar Syrup:
* In a saucepan, combine sugar and water.
* Bring to a boil, stirring occasionally, until the sugar dissolves completely.
* Reduce heat and simmer for 5-7 minutes, or until the syrup reaches a one-string consistency (when you take a drop of syrup between your fingers and pull them apart, a thin thread should form).
* Add cardamom powder and saffron strands (if using).
4. Fry the Gulab Jamuns:
* Heat oil in a deep pan over medium heat.
* Carefully drop a few gulab jamun balls into the hot oil.
* Fry until golden brown and slightly puffed up.
* Remove with a slotted spoon and drain on paper towels.
5. Soak in Syrup:
* Gently add the fried gulab jamuns to the warm sugar syrup.
* Let them soak for at least 30 minutes, or until they have absorbed the syrup and become plump.
6. Serve:
* Garnish with chopped pistachios and serve warm or chilled.
Tips:
* For extra flavor, add a pinch of saffron to the milk while kneading the dough.
* If the syrup is too thick, add a little warm water to adjust the consistency.
* To make the gulab jamuns extra soft, you can add a little milk powder to the sugar syrup.
* For a richer flavor, use ghee instead of oil for frying.
