Classic Eggnog Recipe
Yields: 6 servings
Prep time: 15 minutes
Cook time: 5 minutes
Ingredients:
* 6 large egg yolks
* 1/2 cup granulated sugar
* 2 cups whole milk
* 1 cup heavy cream
* 1/2 teaspoon ground nutmeg
* 1/4 teaspoon ground cinnamon
* Pinch of salt
* 1/2 cup dark rum or brandy (optional)
* Freshly grated nutmeg for garnish
Instructions:
* Whisk egg yolks and sugar: In a large bowl, whisk together the egg yolks and sugar until light and fluffy.
* Heat milk and spices: In a saucepan, heat the milk, heavy cream, nutmeg, cinnamon, and salt over medium heat until small bubbles form around the edges.
* Temper the eggs: Slowly pour the hot milk mixture into the egg yolks, whisking constantly to prevent the eggs from scrambling.
* Cook and strain: Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened slightly. Strain the mixture through a fine-mesh sieve into a bowl.
* Chill and add alcohol: Chill the eggnog in the refrigerator for at least 2 hours, or until well chilled. If using alcohol, stir it in before serving.
* Serve: Pour the eggnog into glasses and garnish with freshly grated nutmeg.
Tips:
* For a richer eggnog, use whole milk instead of low-fat milk.
* If you don't have rum or brandy, you can use bourbon or whiskey.
* For a non-alcoholic version, omit the alcohol.
* You can also add a pinch of ground cloves for extra flavor.
* Serve chilled or over ice.
Enjoy your delicious and festive eggnog!
