Ingredients:
* 1 cup besan (gram flour)
* 1/4 cup semolina (rava)
* 1 teaspoon sugar
* 1/2 teaspoon salt
* 1/4 teaspoon turmeric powder
* 1/2 teaspoon ginger-green chili paste
* 1 tablespoon lemon juice
* 1 cup water
* 1/2 teaspoon Eno fruit salt
* Oil for greasing
* For tempering:
* 1 tablespoon oil
* 1/2 teaspoon mustard seeds
* 1/2 teaspoon cumin seeds
* 1 sprig curry leaves
* 1 green chili, slit
Instructions
* Combine dry ingredients: In a large bowl, whisk together besan, semolina, sugar, salt, turmeric powder, and ginger-green chili paste.
* Add wet ingredients: Gradually add water to the dry ingredients, whisking continuously to avoid lumps. The batter should have a pouring consistency. Add lemon juice and mix well.
* Add Eno: Just before steaming, add Eno fruit salt to the batter and mix gently for 30 seconds. The batter will become frothy.
* Steam: Grease a steamer plate or baking dish with oil. Pour the batter into the greased dish. Steam for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
* Make the tempering: Heat oil in a small pan. Add mustard seeds and let them crackle. Add cumin seeds, curry leaves, and slit green chili. Sauté for a few seconds until aromatic.
* Soak and serve: Remove the steamed dhokla from the steamer and let it cool slightly. Cut it into squares. Pour the tempering evenly over the dhokla. Soak the dhokla in water for 5-10 minutes to soften.
* Garnish: Garnish with chopped coriander leaves and serve warm.
Tips:
* For a softer dhokla, you can increase the steaming time slightly.
* You can add a pinch of baking soda to the batter for extra fluffiness.
* Dhokla can be enjoyed with various chutneys, such as green chutney, tomato chutney, or tamarind chutney.
