Ingredients:
* 1 tablespoon olive oil
* 1 pound ground beef
* 1 pound ground pork sausage
* 1 onion, chopped
* 1 green bell pepper, chopped
* 2 cloves garlic, minced
* 1 tablespoon Cajun seasoning
* 1 teaspoon dried oregano
* 1/2 teaspoon dried thyme
* 1/4 teaspoon cayenne pepper (adjust to taste)
* 1 cup long-grain rice
* 2 cups chicken broth
* 1 bay leaf
* Salt and pepper to taste
* Chopped fresh parsley, for garnish
Instructions:
* Brown the meat: Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and sausage. Cook, breaking up the meat with a spoon, until browned. Drain off excess fat.
* Sauté vegetables: Add onion, green bell pepper, and garlic to the pot. Cook until softened, about 5 minutes.
* Add spices: Stir in Cajun seasoning, oregano, thyme, and cayenne pepper. Cook for 1 minute more.
* Add rice and broth: Stir in rice, chicken broth, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and liquid is absorbed.
* Rest: Remove from heat and let stand for 5 minutes before fluffing with a fork.
* Serve: Discard bay leaf. Garnish with chopped parsley and serve hot.
Tips:
* Adjust spice level: Adjust the amount of cayenne pepper to your desired heat level.
* Add-ins: Feel free to add other ingredients to your dirty rice, such as diced celery, chopped mushrooms, or even cooked chicken livers.
* Make ahead: Dirty rice can be made ahead of time and reheated gently.
