Ingredients:
* 3 large eggs
* 1/3 cup all-purpose flour
* 1/3 cup milk
* 1 tablespoon sugar
* 1/4 teaspoon salt
* 1/4 teaspoon vanilla extract
* 4 tablespoons unsalted butter, plus more for greasing
* Powdered sugar, for dusting

Instructions:
* Preheat oven: Preheat oven to 425°F (220°C).
* Heat butter: Place an oven-proof skillet (cast iron works well) in the oven to preheat.
* Combine ingredients: In a blender or bowl, whisk together eggs, flour, milk, sugar, salt, and vanilla extract until smooth.
* Bake: Remove the hot skillet from the oven. Add 4 tablespoons of butter to the skillet and swirl to coat. Pour the batter into the hot skillet.
* Bake: Return the skillet to the oven and bake for 15-20 minutes, or until the edges are puffed and golden brown.
* Serve: Immediately invert the skillet onto a large plate. Dust with powdered sugar and serve immediately with your favorite toppings.
