Rich and Decadent Dark Chocolate Ice Cream

Ingredients:
* 1 cup whole milk
* 1 cup heavy cream
* 1/2 cup granulated sugar
* 1/4 cup unsweetened cocoa powder
* Pinch of salt
* 4 large egg yolks
* 1 teaspoon vanilla extract
* 6 ounces bittersweet chocolate, chopped
Instructions:
* Combine ingredients: In a medium saucepan, whisk together the milk, heavy cream, sugar, cocoa powder, and salt.
* Heat the mixture: Bring the mixture to a simmer over medium heat, stirring constantly.
* Temper the egg yolks: In a small bowl, whisk the egg yolks slightly. Gradually whisk in about 1/4 cup of the hot milk mixture into the egg yolks.
* Combine mixtures: Slowly pour the egg yolk mixture back into the saucepan, whisking constantly.
* Cook the custard: Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon. Do not boil.
* Add chocolate: Remove from heat and stir in the chopped chocolate until melted and smooth.
* Chill: Stir in the vanilla extract. Strain the mixture through a fine-mesh sieve into a bowl. Cover and chill in the refrigerator for at least 4 hours, or overnight.
* Freeze: Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions.
* Harden: Transfer the ice cream to an airtight container and freeze for at least 2 hours, or until firm.
Tips:
* For a richer flavor, use high-quality dark chocolate with at least 70% cocoa solids.
* To make the ice cream even more decadent, add a tablespoon of espresso powder or instant coffee to the milk mixture.
* For a smoother texture, pass the ice cream through an ice cream maker again after it has hardened slightly in the freezer.
* Garnish with chocolate shavings or chopped nuts before serving.
