1. Sheet Pan Lemon Herb Roasted Chicken and Veggies

 * Ingredients:

   * 1.5 pounds boneless, skinless chicken breasts or thighs

   * 1 pound mixed vegetables (broccoli, carrots, potatoes, etc.)

   * 2 tablespoons olive oil

   * 1 lemon, zested and juiced

   * 2 cloves garlic, minced

   * 1 teaspoon dried oregano

   * 1/2 teaspoon dried thyme

   * Salt and pepper to taste

 * Instructions:

   * Preheat oven to 400°F (200°C).

 * Ingredients:

   * 1 pound Italian sausage, casings removed

   * 1 (15 ounce) can diced tomatoes

   * 1 cup chicken broth

   * 1 teaspoon dried oregano

   * 1/2 teaspoon dried basil

   * 1/4 teaspoon red pepper flakes

   * Salt and pepper to taste

   * 1 pound pasta (penne, rotini, or farfalle)

   * 1 cup baby spinach

 * Instructions:

   * Brown sausage in a large pot over medium heat. Remove sausage and set aside.

   * Add onion and garlic to the pot and cook until softened.

   * Stir in crushed tomatoes, diced tomatoes, chicken broth, oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer.

   * Add pasta to the pot and cook according to package directions, stirring occasionally.

   * Add sausage and spinach to the pot and cook until spinach is wilted.

3. Black Bean Burgers

 * Ingredients:

   * 1 (15 ounce) can black beans, rinsed and drained

   * 1/2 cup rolled oats

   * 1/4 cup chopped onion

   * 2 cloves garlic, minced

   * 1/4 cup chopped cilantro

   * 1 egg

   * 1 tablespoon chili powder

   * 1 teaspoon cumin

   * Salt and pepper to taste

   * Buns, toppings (lettuce, tomato, avocado, etc.)

 * Instructions:

   * Combine all ingredients in a large bowl and mash with a fork until well combined.

   * Form into 4 patties.

   * Heat a large skillet over medium heat and cook patties for 5-7 minutes per side, or until golden brown and cooked through.

   * Serve on buns with your favorite toppings.
