 Chicken with Coconut Kale is a delicious, hearty dish combining tender chicken with a creamy coconut sauce and nutrient-rich kale. Here's a simple recipe to make it:


Ingredients:


4 boneless, skinless chicken breasts or thighs


1 tbsp olive oil or coconut oil


1 medium onion, finely chopped


3 cloves garlic, minced


1 tsp ground turmeric (optional for color and flavor)


1 tsp ground cumin


1/2 tsp ground coriander


1 can (14 oz) coconut milk (full-fat or light)


2 cups fresh kale, chopped (stems removed)


Salt and pepper, to taste


1-2 tbsp fresh lemon or lime juice (optional)


Fresh cilantro, chopped (optional, for garnish)



Instructions:


1. Prepare the Chicken:


Season the chicken with salt, pepper, cumin, and coriander.


Heat the olive oil or coconut oil in a large skillet or pan over medium-high heat.


Add the chicken and cook for about 5-7 minutes per side until golden brown and cooked through (165°F internal temperature).


Remove the chicken from the pan and set it aside, keeping it warm.



2. Make the Coconut Sauce:


In the same skillet, add a little more oil if needed and sauté the chopped onion for about 3-4 minutes, until softened.


Add the garlic and turmeric (if using) and cook for another minute until fragrant.


Pour in the coconut milk and stir to combine. Let the sauce simmer for 3-5 minutes to thicken slightly. Season with salt and pepper to taste.



3. Add the Kale:


Stir the chopped kale into the coconut sauce and cook for 3-4 minutes, or until the kale is wilted and tender.


Add lemon or lime juice to the sauce for a burst of freshness (optional).



4. Serve:


Return the chicken to the skillet, nestling it into the coconut kale sauce.


Let it simmer together for a couple of minutes so the flavors meld.


Garnish with fresh chopped cilantro and serve hot.
