Ricotta Meatballs with the Crispy Topping

Ricotta Meatballs with the Crispy Topping is a delicious, juicy twist on traditional meatballs. The ricotta cheese adds creaminess to the meatballs, and the crispy topping gives them an extra layer of texture. Here's how to make them:

Ingredients:

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup ricotta cheese

1/4 cup breadcrumbs (preferably panko)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tbsp fresh parsley, chopped (or basil, if you prefer)

1 tsp dried oregano

Salt and pepper, to taste

For the Crispy Topping:

1/4 cup panko breadcrumbs

2 tbsp grated Parmesan cheese

1 tbsp olive oil

1 tsp dried oregano or Italian seasoning

A pinch of red pepper flakes (optional for heat)

For Serving:

Tomato sauce (store-bought or homemade)

Fresh basil or parsley, chopped (for garnish)

Instructions:

1. Prepare the Meatballs:

Preheat the oven to 400°F (200°C).

In a large bowl, combine the ground meat, ricotta cheese, breadcrumbs, Parmesan cheese, egg, minced garlic, parsley, oregano, salt, and pepper.

Mix everything together gently until just combined—avoid overmixing to keep the meatballs tender.

Form the mixture into meatballs, about 1 to 1 1/2 inches in diameter, and place them on a parchment-lined baking sheet.

2. Make the Crispy Topping:

In a small bowl, mix the panko breadcrumbs, Parmesan cheese, olive oil, oregano (or Italian seasoning), and red pepper flakes (if using).

Sprinkle the topping evenly over the meatballs.

3. Bake the Meatballs:

Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and golden brown on top. You can check for doneness by cutting one open—there should be no pink in the center (internal temperature of 165°F/74°C).

4. Serve:

Heat your tomato sauce in a pan or microwave.

Serve the meatballs hot, drizzled with tomato sauce and garnished with fresh basil or parsley.

Serving Suggestions:

Serve the Ricotta Meatballs with pasta, on a sub roll for a meatball sandwich, or alongside a fresh salad.

You can also pair them with garlic bread or roasted vegetables for a complete meal.

The ricotta makes the meatballs wonderfully moist, while the crispy topping adds the perfect crunch. Enjoy!
