Ingredients:
* 1 pound ground chicken
* 1 large onion, finely chopped
* 2 cloves garlic, minced
* 1-inch piece ginger, grated
* 1 green chili, finely chopped (optional)
* 1/4 cup chopped cilantro
* 1/4 cup chopped mint leaves
* 1 teaspoon garam masala
* 1/2 teaspoon cumin powder
* 1/4 teaspoon red chili powder
* 1/4 teaspoon turmeric powder
* Salt to taste
* 1 egg white (optional)
* 1 tablespoon olive oil
* 8-10 wooden skewers, soaked in water for at least 30 minutes
Instructions:
* Combine Ingredients: In a large bowl, combine the ground chicken, chopped onion, minced garlic, grated ginger, green chili (if using), cilantro, mint leaves, garam masala, cumin powder, red chili powder, turmeric powder, salt, and egg white (if using). Mix well until all ingredients are evenly distributed.
* Shape Kebabs: Divide the mixture into 8-10 equal portions. Thread each portion onto a soaked skewer, pressing the mixture firmly to form a compact kebab.
* Grill or Broil: Preheat a grill or broiler to medium-high heat. Brush the skewers lightly with olive oil. Grill or broil the kebabs for 5-6 minutes per side, or until they are cooked through and slightly charred.
* Serve: Remove the kebabs from the grill or broiler and serve immediately with your favorite dipping sauce, such as mint chutney, tamarind chutney, or yogurt sauce.
Tips:
* For extra flavor, you can add a pinch of asafoetida (hing) to the mixture.
* If you don't have a grill or broiler, you can bake the kebabs in a preheated oven at 400°F (200°C) for 10-12 minutes, turning them halfway through.
* You can adjust the amount of spices according to your preference.
* Serve the kebabs with chopped onions, lemon wedges, and fresh cilantro for a refreshing garnish.
