Chicken Meatballs

 Yields: About 24 meatballs

Prep time: 15 minutes

Cook time: 15-20 minutes

Ingredients:

 * 1 pound ground chicken

 * 1/4 cup bread crumbs

 * 1/4 cup grated Parmesan cheese

 * 1 egg

 * 1/4 cup chopped onion

 * 2 cloves garlic, minced

 * 1 teaspoon Italian seasoning

 * 1/2 teaspoon salt

 * 1/4 teaspoon black pepper

 * Olive oil for greasing

Instructions:

 * Combine ingredients: In a large bowl, combine ground chicken, bread crumbs, Parmesan cheese, egg, onion, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined. Overmixing can make the meatballs tough.

   

 * Shape meatballs: Using your hands or a small cookie scoop, shape the mixture into 1-inch balls.

   

 * Cook:

   * Baking: Preheat oven to 400°F (200°C). Lightly grease a baking sheet with olive oil. Arrange meatballs on the baking sheet, leaving some space between them. Bake for 15-20 minutes, or until cooked through and slightly browned.

   * Pan-frying: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the meatballs in batches, turning occasionally, until browned and cooked through, about 5-7 minutes per batch.

     

 * Serve: Serve immediately with your favorite sauce, such as marinara, pesto, or barbecue sauce.

Tips & Variations:

 * Add-ins: Get creative with add-ins! Try chopped spinach, sun-dried tomatoes, chopped olives, or chopped fresh herbs like parsley or basil.

 * Spice it up: Add a pinch of red pepper flakes or a dash of hot sauce for some heat.

 * Make ahead: Form the meatballs and freeze them on a baking sheet. Once frozen, transfer them to a freezer bag for easy storage. Cook from frozen, adding a few extra minutes to the cooking time.
