Yields: 4 servings
Prep time: 15 minutes
Cook time: 30-40 minutes
Ingredients:
* 4 bone-in, skin-on chicken thighs
* 2 tablespoons olive oil
* 1 teaspoon paprika
* 1 teaspoon garlic powder
* 1/2 teaspoon onion powder
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* Fresh herbs (optional): rosemary, thyme, oregano
Instructions:
* Preheat oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
* Prepare chicken: Pat the chicken thighs dry with paper towels. In a small bowl, combine olive oil, paprika, garlic powder, onion powder, salt, pepper, and any desired fresh herbs.
* Season chicken: Rub the seasoning mixture all over the chicken thighs, making sure to get under the skin as well.
* Bake: Place the chicken thighs skin-side up on the prepared baking sheet. Bake for 30-40 minutes, or until the internal temperature reaches 165°F (74°C) on an instant-read thermometer. The skin should be golden brown and crispy.
* Rest: Let the chicken rest for 5-10 minutes before serving. This allows the juices to redistribute, resulting in more tender meat.
Tips & Variations:
* For extra crispy skin: Broil the chicken for a few minutes at the end of cooking to crisp up the skin.
* Add vegetables: Roast vegetables like potatoes, carrots, or broccoli alongside the chicken for a complete meal.
* Make it spicy: Add a pinch of cayenne pepper or red pepper flakes to the seasoning mix.
* Lemon herb: Add the zest and juice of one lemon to the seasoning mixture for a bright, citrusy flavor.
Enjoy your perfectly baked, juicy, and flavorful chicken thighs!
