Classic New York-Style Cheesecake Recipe
Yields: 1 (9-inch) cheesecake
Prep time: 20 minutes
Chill time: 8 hours or overnight
Ingredients:
For the crust:
* 1 1/2 cups graham cracker crumbs
* 5 tablespoons unsalted butter, melted
* 2 tablespoons granulated sugar
For the filling:
* 32 ounces cream cheese, softened
* 1 1/4 cups granulated sugar
* 1/2 cup sour cream
* 1 teaspoon vanilla extract
* 1/4 teaspoon salt
* 4 large eggs
Instructions:
* Make the crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom and up the sides of a 9-inch springform pan.
* Make the filling: In a large bowl, beat cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add sugar, beating until well combined. Beat in sour cream, vanilla extract, and salt until smooth.
* Add eggs: Add eggs one at a time, beating on low speed after each addition just until combined. Be careful not to overmix.
* Bake: Pour the filling into the prepared crust. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
* Cool: Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour. Then, remove the cheesecake from the oven and let it cool completely on a wire rack at room temperature.
* Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 8 hours or overnight before serving.
Tips:
* For a richer flavor, use full-fat cream cheese and sour cream.
* To prevent cracks, use room temperature eggs and avoid overmixing the batter.
* You can garnish the cheesecake with fresh berries, whipped cream, or chocolate sauce.
Enjoy your delicious homemade cheesecake!
